How this is calculated
For each ingredient: cost = (container cost ÷ container size) × amount used
Total cost = sum of ingredient costs + garnish allowance
Cost % = total cost ÷ menu price × 100
Suggested price = total cost ÷ target cost %
What this does not tell you
- Keep container size and amount used in the same unit. The default rows use millilitres throughout; 1 oz is 29.57 ml.
- Labour is not included. A drink with a three-minute build costs more than this number says.
